Practical learning experience

The program is built around Harbor Table, a fictional 90-seat casual restaurant serving dine-in, takeaway and delivery guests. Each lesson teaches one practical method and one workplace artifact. Guided cases, blank structures, completed examples, calculation and review checks, and transfer questions help you apply the method to realistic restaurant conditions.

Your work develops progressively. Early lessons establish the operating picture and demand assumptions. The middle of the program converts those assumptions into people, inventory, supplier and shift-readiness plans. Later lessons address live control, handovers, guest recovery and continuity. The final module connects performance, cost, coaching, responsible AI use and improvement testing.

Applied capstone

Restaurant Week Planning and Performance Review

The capstone places you in an event week at Harbor Table. Demand is distributed across dine-in, takeaway and delivery; delivery demand remains uncertain; two team members are new; a produce order may arrive short; grill maintenance is scheduled; wait times have increased; and avoidable waste needs attention.

You will create the principal deliverable, a Weekly Restaurant Operations Plan and Performance Review. It brings together demand assumptions and constraints; staffing, readiness, stock, supplier and maintenance priorities; live-control and escalation actions; a connected performance review; two focused management actions; and one bounded improvement test. The result shows how you can explain the links between operating information, decisions and follow-through.
